Thecelebrityofthebread-fruittree，andtheconspicuousplaceitoccupiesinaTypeebilloffare，inducesmetogiveatsomelengthageneraldescriptionofthetree，andthevariousmodesinwhichthefruitisprepared。
Thebread-fruittree，initsgloriousprime，isagrandandtoweringobject，formingthesamefeatureinaMarquesanlandscapethatthepatriarchalelmdoesinNewEnglandscenery。Thelattertreeitnotalittleresemblesinheight，inthewidespreadofitsstalwartbranches，andinitsvenerableandimposingaspect。

Thereisoneform，however，inwhichthefruitisoccasionallyserved，thatrendersitadishfitforaking。Assoonasitistakenfromthefiretheexteriorisremoved，thecoreextracted，andtheremainingpartisplacedinasortofshallowstonemortar，andbrisklyworkedwithapestleofthesamesubstance。Whileonepersonisperformingthisoperation，anothertakesaripecocoa-nut，andbreakingitinhalf，whichtheyalsodoverycleverly，proceedstogratethejuicymeatintofineparticles。Thisisdonebymeansofapieceofmother-of-pearlshell，lashedfirmlytotheextremeendofaheavystick，withitsstraightsideaccuratelynotchedlikeasaw。
Thestickissometimesagrotesquely-formedlimbofatree，withthreeorfourbranchestwistingfromitsbodylikesomanyshapelesslegs，andsustainingittwoorthreefeetfromtheground。
Thenative，firstplacingacalabashbeneaththenose，asitwere，ofhiscurious-lookinglog-steed，forthepurposeofreceivingthegratedfragmentsastheyfall，mountsastrideofitasifitwereahobby-horse，andtwirlingtheinsideofoneofhishemispheresofcocoa-nutaroundthesharpteethofthemother-of-pearlshell，thepurewhitemeatfallsinsnowyshowersintothereceptacleprovided。
Havingobtainedaquantitysufficientforhispurpose，heplacesitinabagmadeofthenet-likefibroussubstanceattachedtoallcocoa-nuttrees，andcompressingitoverthebread-fruit，whichbeingnowsufficientlypounded，isputintoawoodenbowl-extractsathickcreamymilk。Thedeliciousliquidsoonbubblesroundthefruit，andleavesitatlastjustpeepingaboveitssurface。
Thispreparationiscalled“kokoo，“andamostlusciouspreparationitis。Thehobby-horseandthepestleandmortarwereingreatrequisitionduringthetimeIremainedinthehouseofMarheyo，andKory-Koryhadfrequentoccasiontoshowhisskillintheiruse。
